Prepare 100 gms of Plain flour.
It's 100 gms of Sugar.
It's 1/2 tsp of Baking powder.
Prepare 1/4 tsp of Baking soda.
Prepare 2 of eggs on room temperature.
It's 3 tbsp of Milk.
Prepare 1/4 cup of Oil.
It's 3/4 tbsp of lemon zest.

Lemon cupcakes instructions

Beat eggs and sugar for 4 mins on high speed..
Add oil and lemon Zest in egg batter and mix on low speed for 20 sec..
Sieve plain flour, baking soda and baking powder for 3-4 times..
Add flour sieved in 2-3 parts with spetula in egg batter and fold..
Add milk and make smooth batter. Take cupcake tray and fill each cup with 3/4 batter..
Bake 15-18 mins on 180 C or till toothpick become clear..
Let them cool down and then add frosting..
